Let’s Eat Tacos
At least once a week my family and I turn our kitchen into a Mexican Fiesta! We enjoy soft shell tacos topped with ground turkey, dark red beans, rice, lettuce, spice it up with hot sauce, low-fat shredded cheese, and maybe some ranch dressing.
This is a quick and easy recipe enjoyed my all. Of course if you need to modify it to your taste by all means be my guest.
Ingredients
1 – lb of ground turkey meat
1- can of dark red beans
1- Old El Paso Dinner kit (includes 10 Flour Tortillas, Mild Taco Sauce, Seasoning Mix
To save money we do not use Old El Paso Taco kits any longer.
From BJs Wholesale Club we purchase a jar of taco seasoning and a jar of mild salsa.
1/2 – cup of rice (you pick the rice you love to eat)
Directions
Brown the ground turkey over medium heat in a skillet.
Rinse dark red beans and add to ground turkey
Add to skillet cooked rice to 2/3 cups of water after turkey is browned. Then add taco season mix and salsa to skillet. Stirring occasionally.
I subsitute the flour tortillas with corn tortillas. To heat corn tortillas I place them on a skillet an medium heat flipping every minute until slightly brown. Corn tortillas in my opinion should be heated this way. Any other way they are too chewy.
Our sides include veggies and a salad. The salad can be used for topping the tacos if you would like. Sometime we top our tacos with our veggie of the day.
This is a quick easy and fun meal to share with your family in the middle of the week when no one feels like cooking. Quick & easy.
To stay on track with my healthy lifestyle but also enjoy everyday meals I less my portions size. I eat 2 corn tortrillas with a teaspoon of meat/bean mixture, adding low fat cheese and lettuce to my taco and maybe topping it off with my veggie of the day. My plate is full of veggies and salad also.
